Here is a fast and easy recipe that pleases my most finicky eaters! It is Tex-Mex and super yummy! Here we go….
1 package flour tortillas
2 pounds lean ground beef
2 packages Taco Seasoning
1 16 ounce sour cream
2-4 cups grated Mexican Cheese or Mild Cheddar
Heat oven to 350 degrees. In a medium bowl mix sour cream and soup together. Brown your lean ground beef on stove and drain when done. Add your taco seasoning and make according to package directions. Meanwhile spray a 13×9 casserole dish with any non-stick spray. On both sides of the tortillas spread the sour cream/soup mixture on each tortilla. I do mine on a plate one at a time. Add meat down the center along with the grated cheese. Fold and place in casserole dish. Do this to each one until you run out of your mixtures. If you have left over sauce, and you should, pour over the top of the enchiladas. Bake covered for 45 minutes. Uncover and add additional cheese and cook until the cheese is melted. Serve with salsa and chips if you would like or you can add some guacamole! Enjoy!! Juliana
